SUPER BOWL SUNDAY!

Can you believe it? The Super Bowl is TOMORROW! We can hardly believe it ourselves. In fact, while flying on a plane the other day. A man asked me which team I was rooting for this weekend. It took me a second to figure out what he was talking about but now that I remember, I am soooo excited….GO BRONCOS!

We thought it only appropriate to post about great appetizers to serve at a Super Bowl Party. Our guess is you have already been invited to a gazillion Super Bowl Party’s or maybe you are hosting one yourself…so we hope this is helpful and inspiring.

Naturally, the first place that we looked for inspiration was Pinterest (only the best Social Media site for just about everything). Here are our top favorites!

MEATBALL SUB ON A STICK

Super Bowl Sunday

Makes 12 Skewers

INGREDIENTS

  • 1 lb lean ground turkey
  • ½ cup Italian bread crumbs
  • ½ cup grated Parmesan cheese
  • 1 Tbsp dried Oregano
  • 1 Tbsp dried Basil
  • 1 Tbsp dried Parsley or ¼ cup fresh chopped
  • ½ tsp Crushed Red Pepper
  • 2 cloves garlic, minced
  • 1 can Pillsbury Original breadsticks
  • 1 cup shredded mozzarella cheese
  • 12 (10″-12″) wooden skewers
  • Marinara sauce for dipping

INSTRUCTIONS

  1. Preheat oven to 375°
  2. Line 2 baking sheets with parchment paper. Set aside.
  3. In bowl combine ground turkey, bread crumbs, Parmesan cheese, Oregano, Basil, Parsley, red pepper flakes and garlic. Form into 1 inch meatballs.
  4. Open can of breadsticks and starting with one breadstick at a time thread dough then meatball. Repeat the process with 2 more meatballs alternating dough-meatball, ending with dough. Make sure to spread dough and meatballs away from each other by about ¼”, so the meatballs bake through and the dough has room to expand.
  5. Bake for 20 minutes until the meatballs are cooked through. Remove from oven and ssprinkle each skewer with 1-2 Tbsp of shredded mozzarella cheese. Place back in oven for 2-3 minutes until cheese is melted.
  6. Serve immediately with warm marinara sauce for sipping.

CORN DOG POPS

INGREDIENTS

  • 1 quart (4 cups) oil for frying
  • 2 whole eggs
  • 1 cup milk
  • 1 cup Original Bisquick™ mix
  • 1 cup cornmeal
  • 1/2 teaspoon dry ground mustard
  • 1/2 teaspoon paprika
  • 8 hot dogs, cut in half
  • 16 wooden skewers
  • Mustard and ketchup for dipping

DIRECTIONS

  1. Pour oil into a small pot and heat to medium high.
  2. While oil is heating, make the batter. In a medium bowl, whisk the eggs and milk together. Add the Bisquick, cornmeal, mustard, and paprika. Mix well and set aside.
  3. Trim the pointed edges of the bamboo skewers off with some scissors. Put a bamboo skewer in each hot dog half lengthwise.
  4. Dip each hot dog in the batter, coating completely, then place in the hot oil. Cook about 3-4 at a time making sure not to crowd the pot. Cook for 3-4 minutes or until corn dogs are golden brown.
  5. Remove from the oil and drain the corn dogs on paper towels.

Serve immediately with ketchup and mustard for dipping.

CHOCOLATE CHIP COOKIE DOUGH FOOTBALLS

INGREDIENTS:

  • 3/4 cup salted butter, room temperature
  • 1/2 cup dark brown sugar
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1-2 tbsp water, if needed
  • 1 1/2 cups mini chocolate chips
  • 16 oz chocolate candiquick
  • 3 oz vanilla candiquick

DIRECTIONS:

  1. Cream butter and sugar together until light and fluffy, about 3-4 minutes.
  2. Mix in vanilla extract.
  3. Add flour and mix until well combined. Dough will be thick. Add 1-2 tbsp of water, if needed to help the dough come together.
  4. Stir in mini chocolate chips.
  5. Shape balls of cookie dough about one tablespoon in size into footballs, then place on a parchment lined cookie sheet.
  6. Refrigerate balls for about 30 minutes, or until firm.
  7. Melt chocolate candiquick in a bowl until smooth.
  8. Using a toothpick (or the fork method mentioned above) dip the footballs into the melted chocolate, then tap to remove excess.
  9. Place balls back onto parchment lined cookie sheet to harden.
  10. Once the balls are dry, melt the vanilla candiquick.
  11. Pipe the vanilla candiquick onto the footballs to create the strings. Allow to dry.

Haaappppyyyyy NEW YEAR!! Okay, okay…maybe we are a bit late on the wishing a “Happy New Year” train but we still wanted to join in on the fun. We always get excited for the New Year around here. It means that we can set our new year’s resolutions, create new dreams and work towards success.

While setting our goals, we realized that one of the number ONE goals that people make is associated with their physical appearance…can you believe that? Yep, people want to look good.

As exciting as it is to set new year’s resolutions, did you know that less than half of the individuals who make new year’s resolutions actually keep them? How can you be one of the few that complete your new year’s resolution? Here are some tips we have found to work on our journey to success (believe us, we are not perfect, yet!):

  1. Set CLEAR goals- Be very specific in what your goal is and what you want to see happen. The more you can visualize it, the better chance you have at success.
  1. WRITE it down- Don’t just think it, write it. Place it somewhere you will see it often. Having the constant reminder of your goal will keep it at the top of your mind…not the back of it.
  1. Just like we do in business, write a business plan. Write down what you want, how you are going to achieve it, and what that success will feel like.
  1. TRACK your progress- When you track your progress you can see it, which will help motivate you to keep going. If you are not seeing results, tracking your progress will help you determine what changes you need to make. Make sure you track it often!
  1. Stay patient- Results will come if you are putting in the time, effort, and passion that is needed to complete goals. Remember, all good things take time but they will be worth it. Give yourself room to enjoy the process. No one is perfect but if you know that, you also know you can always do better. Keep up the great work!
  1. Be realistic- Don’t overwhelm yourself by making too many goals. Be realistic in knowing what you can handle and what you can accomplish. If you set to many goals at once, you will drop out within the first couple of weeks. Once you have concurred one goal, you can move on to the next.

Party Planning Tips

Metro Property Management and their brother company Bearthooth Holding and Construction, celebrated their Holiday Christmas Party last Wednesday. It was the first time in years that the two companies joined in celebrating together. We are so grateful for all who came and celebrated with us! Party planning can be stressful sometimes but when you have a great group like this to plan for, it makes it exciting!

As one of the planners for the party, I was pleased with the result. Having a great crew, schedule, and organization to work with can make the planning process fun and go a lot more smoothly.

Here are some fun tips for party planning:

  1. Make sure you start party planning way in advance! The more time you have to plan, the better the results will be.
  1. Come up with a budget that you would like to stay within, this way, while you are looking for a venue, a caterer, decorations, and all of those little things that you might not think about while starting to plan a party (i.e. invitations, postage, music, help to put up the decorations, party favors, etc.), you will have a budget to follow. This will help you from spending too much money!
  1. Pick a theme that you would like to base the party around; for example, we chose, A Touch of Country Christmas, as our theme. This will help you to organize your ideas and what you want for decorations. If it doesn’t fit the theme, don’t use it!
  1. Choose a place! Make sure you pick out a few different venues, this way you will not be disappointed if one of the venues is not within your price range. One of them is almost always guaranteed to be within the budget. If you are not required to have the party on a weekend, you might consider checking the prices and availability of the venue on a weeknight. It is usually cost effective to do that. We chose the Billings Depot, the historic railroad in Billings, MT. It went with our theme, plus we just love the building! They were incredible to work with, they worked with our schedule, our budget, and were very helpful in the renting process.
  1. Choose a Caterer that is well known. If you need to look at their reviews and ask around, do it. There is nothing worse than getting to the day of the party, tasting the food, and realizing it was a terrible choice. We used a Touch Of Country Catering, and we highly recommend them. The food was delicious, they were great to work with, they gave good recommendations for food, and they were prompt, helpful, and delightful to be around.
  1. When planning, keep your ideas organized. Keep a binder that is divided into different sections; such as, food, venue, decorations, music, party favors, catering, business cards/contact info for the different contacts you will need to repeatedly get in contact with, etc. This will help you keep your ideas organized and it will help you feel less stressed and more in control of what is going on.
  1. In our opinion, it is always more fun to have music at any party, so we hired Action Entertainment to DJ our event. They are a great entertainment company who are well known in the Billings area. They have a wide range of party entertainment resources, which include NASCAR remote control racing, game show trivia, DJ services, and so much more, check them out for your next party.   1. Last but not least, party favors! It is always fun to go to a party and receive a little ‘Thank You’ for attending when leaving the party. This year we decided to hand out Santa Claus Soup (Hot Chocolate) packs. The idea came from Pinterest (a great place to get ideas!).

Stay Safe on the Roads this Winter Season!

Well it finally snowed in Billings, Montana…winter is officially here! You can imagine my surprise when I woke up and saw the fresh white powder outside my window (you might have felt the same surprise). On the way to the office this morning, cars were sliding ALL over the road and OFF the road, which was the inspiration for this article, Stay Safe on the Roads this Winter Season!

Although the snow is beautiful and there are a lot of fun activities while it is snowy outside, it is important to understand how to drive and stay safe in the snow.

Here are a few tips on how to do this!

For the car:

  1. Make sure your car is in good working condition. Check your battery, your tire tread, and the windshield wipers. Also, it is important to check your antifreeze and to put no-freeze fluid in your washer reservoir.
  2. When you start your car let it run for a few minutes before driving it to make sure the engine is warmed up. Additionally, do not start your engine in an enclosed area. If you are in the garage, open the garage door.
  3. Make sure you have a winter safety kit in your car.
    • Food that will not go bad, like energy bars
    • Water
    • Extra clothes
    • Blanket
    • Flashlight and a candle just in case the flashlight doesn’t work
    • First Aid Kit
    • Matches
    • Roadmaps
    • Tow rope
    • Jumper cables
    • Antifreeze and windshield washer fluid
    • Make sure your gas tank is always at half full or more.

Driving:

  1. Watch, listen to or look online for the local weather report before driving.
  2. Drive SLOWLY. Everything takes more time to travel to or from in snowy weather, plan your time accordingly so you can drive safe.
  3. Instead of following the car in front of you at a three to four second distance, make sure you increase that to a eight to ten second distance.
  4. If you are sliding, do not slam on your brakes; pump your breaks slowly keeping the heel of your foot on the ground and the ball of your foot on the brake so you can have a controlled stop. If you slam on your brakes, you will probably fishtail or worse, turn your car completely around or run into the car ahead of you. If this does not work and there is room on the side of the road with fresh powder, start easing your car to the side. The fresh powder will help your car stop.
  5. If you are sliding when turning, make sure you keep sliding in the direction you want to go. Do not over correct when you get nervous, this could cause the car to flip.
  6. Start stopping way sooner than normal!!!! Even if it feels too soon, it probably isn’t. It is better to stay safe than get hurt.
  7. Know your brakes and how they work. If you have a good idea of what your brakes are like; whether they are an antilock brake, they stop quickly or they take a little more time to come to a complete stop…this will help you know how to work them in the snow and ice.
  8. And last but not least, if you can, STAY HOME.

Pumpkin Pie Smoothie

WOW! Is it just us or does it feel like the year has gone by abnormally fast? Seriously, Halloween is over (I cannot say we are too sad about that) and Thanksgiving is speedily approaching…which means that Christmas will be here before we know it!

If you’re like us, you might already have all of your Christmas decorations out and you have probably listened to a few Christmas songs. What? We can’t help it, Christmas is a special holiday. But let’s put the brakes on it for a second and take a moment to remember another extraordinary holiday, Thanksgiving!

Thanksgiving has a magical feel about it. It is a time when people are a little more humble and soft as they are reminded of all the amazing gifts and blessings they have in their lives. Individuals reach out to help those around them in the spirit of giving and people seem happier in general.

Another favorite of ours is the food! Can you blame us? It is one of the only times in the year when we can eat as much as we want and not feel bad about it…well maybe just a little eating remorse. But the food is absolutely delicious.

What is your favorite holiday meal or desert? When we think of the Holidays, the one thing that comes into our mind is pumpkin…pumpkin…and more PUMPKIN! Pumpkin pie, pumpkin eggnog, pumpkin bites…I am guessing you get the idea.

Well while on this pumpkin trip the other day, I decided to play around with making a Pumpkin Pie Smoothie. It was SOOO good!

Pumpkin Pie Smoothie Recipe

½ Cup Organic Pumpkin (or any Pumpkin Puree that you would like to use)

2 Banana’s

2 Date Rolls (you can get these at a local Health Food Store)

½ Tsp Pumpkin Spice (you can add more if you want the flavor to be stronger)

½ Tsp Cinnamon

½ Tsp Cloves

1 Cup Unsweetened Almond Milk (or regular milk)

Instructions: Put all of the ingredients in the blender and mix until smooth.

If you are in the process of moving, renting a new apartment or house, have no time for breakfast, or just don’t have a lot of time in general, this is a healthy, easy, and FAST breakfast to make and take out the door.

How can you prepare to rent?

  1. Budget– Financially decide on what you can afford to rent, include the cost of utilities within that budget. Once you know how much you can afford, it will make the search that much easier.
  2. Rental Company– Look for the rental company that best fits your needs or search rentals through Google.com, Zillow.com, Trulia.com, or go directly to the Property Management website (www.rentalsbymetro.com).
  3. Schedule– Before calling on the rentals, make sure you have scheduled out specific times that you can go and look at the unit. This will make it easier when you are scheduling a personal showing with the property manager.
  4. Application– Once you find the rental that fits your needs, fill out an application and turn it in. An application will be needed for each adult living in the unit.
  5. Application fee– Pay the application fee.
  6. Prepare– Be prepared to give landlord references, employment verification, and any additional paperwork that might apply to you. Such as, disability, supplementary income, section 8, etc.
  7. Paperwork– Once all paperwork and application fee’s are turned in, the designated Property Manager will process and approve/disapprove.

Winter Cravings!

Although we have not seen snow yet this winter season (knock on wood), rumors are going around that it is suppose to get close to freezing this weekend…which means it is time to pull out those winter recipe books and cook your favorite winter meals.

If you are like us, you might like to try new things. While working on some marketing for the NEW Metro Property Management Pinterest page, I came across this delicious but very unique chili recipe from Just Another Day in Paradise blog. It is a must try!!

Pumpkin Chili

2 pounds ground beef (90/10) or ground turkey
1 medium onion, chopped
1 cup canned pumpkin
2 (14.5 oz) cans diced tomatoes
1 can pinto or kidney beans, drained
1 (12 oz) bottle of chili sauce (condiment found in the ketchup aisle)
1 cup beef broth
2 Tablespoons of chili powder
2 teaspoons pumpkin pie spice
2 teaspoons brown sugar
1 1/2 teaspoons salt
1 teaspoon pepper

In a large stock pot or dutch oven, brown beef or turkey with the chopped onion. Drain excess grease.

Add in all the remaining ingredients and stir well to mix.

Bring to a boil, then reduce the heat and simmer for 1 hour.

Serve with grated cheese and sour cream.
